MY KITCHEN TALES....... मेरी रसोई से🍽️🍱🎂🍚🍜

THE KITCHEN IS THE HEART 💓 OF THE HOME 🏘️.
With all my heart I welcome you all to my first food blog. It is rightly said that "Good food is good mood" because if you are feeling low ,the good food can uplift your mood instantly and again if your mood is good then only you can cook well. So, to be precise , the key ingredient for a good food is the happiness and love you put into it, offcourse with your efforts.
     I always prefer home-cooked food over outside food coz I believe that there is nothing we can't cook in our kitchen. All we need is desire to learn and Improve. And remember, we can always have our own version of any particular recipe. With a little less ingredients or by substituting a few of them also we can create magics on the plate.
 My first recipe for you all is Fish Biryani. Many call it as a FAKE BIRYANI. Yes, you read it right , as traditionally biryanis are associated with meat and chicken only but today there are varieties of  biryanis available in seafood versions too. And one more reason to call it fake is that people doesn't consider veg Biryani as biryani....they call it pulao.
If you love experimenting and most importantly you are a fish lover, I would highly recommend this recipe to you.
  ( please forgive my amateur photography but this is how my plate of fish biryani looks like......)

Ingredients required
* Basmati rice

Step 1:- Soak the basmati rice for 15-20 mints in water.

Step 2 :-Clean the fish and put salt, lime juice, turmeric powder, red chilli powder, yoghurt, Ginger garlic paste ,mint coriander leaves and green chilly paste. Mix them well and leave it for 15 mints.
 Step 3:- Put one tbspn oil in a deep pan. Add cloves , cinnamon, cardamom, bay leaves & peppercorns. Allow them to crackle and add drained soaked rice into it. Put a little salt and add water. Boil and cook the rice .
Tips- Add few drops of lemon juice while cooking rice. This will prevent rice from sticking .
Once the rice is cooked, spread it in a large plate so that it cools down completely.

Step 4:- Put oil in a pan. Now shallow fry the fish in a medium hot oil by flipping each piece on both sides. For crisp outer side you can use cornflour to coat it.

Step 5:- In a deep vessel, put oil. Once the oil gets heated add Jeera, diced onions, diced green chillies and 1tbspn of ginger garlic paste. Saute it for 5 mins till the ginger garlic gets cooked and onions becomes golden brown. Now add 2 tbspn of yoghurt, chopped mint leaves, turmeric powder, red chilli powder and salt to taste. Also add the leftover fish marinade into it . Cook it for some time till it attains nice thick gravy consistency.

Step 6:- Now put the fried fish into this thick gravy. And it's time now to layer the biryani. Put the cooked rice over the fish .Add fried onions, fresh mint leaves and green chilly slits. Cover the lid and put the biryani on Dum for 5-7 mints.
Your yummy Fish Biryani is ready to serve. Garnish it with fresh mint leaves.

Tips:- Mix the rice very gently before you serve it on the plate as fish being very tender can break .
Serve the biryani with Onion salad and lemon wedges.
